Nut Bar Recipe, from our academy’s recipe selection.
20g desiccated coconut
40g almonds, finely chopped
50g walnuts, finely chopped
40g unsweetened dried cranberries
1/2 tsp vanilla extract
6 pitted dates, finely chopped
pinch of ground cinnamon
40ml unsweetened almond milk
1 tbsp creamed coconut
Place the ingredients in a bowl and mix well.
Line a tray with baking paper.
Transfer the mixture onto the tray, and shape into a rectangle using a spatula.
Refrigerate for 1 hour or more.
Cut into 6 pieces and refrigerate until ready to serve.
