1 tsp ghee or coconut oil
1 large white onion, finely chopped
1kg lean turkey breast mince
1 large carrot, finely chopped
1 stick celery, chopped
3 cloves fresh garlic, finely chopped
100g closed cup mushrooms, chopped
600g tinned chopped tomatoes
1 tbsp tomato purée
1 tsp ground black pepper
1 tsp garlic granules
2 tsps Italian seasoning
a large pinch of sea salt
20g freshly grated Parmesan, to serve (optional)
3 large courgettes, spiralised (or use pasta of your choice)
Heat the ghee/oil in a large saucepan over a medium heat.
Add the onion and sauté for
3-4 minutes, stirring frequently, until soft.
Add the mince and break up into smaller pieces with a wooden spoon, until the mince is
quite fine. Cook for 5 minutes, stirring occasionally.
Add the carrot and celery. Stir and cook for 3 minutes.
Add the garlic and mushrooms. Stir and cook for 3 minutes.
Add the tomato purée, chopped tomatoes and seasonings. Stir well, cover and cook for
