30g coconut oil
1 tsp stevia (or use granulated sweetener of your choice)
1⁄2 tsp peppermint extract
20g dark chocolate (minimum 70% cocoa)
1 tsp coconut oil
Melt the coconut oil in a saucepan over a medium heat.
Add the stevia and stir well until almost dissolved. It may not dissolve completely.
Add the peppermint essence and stir well.
Transfer the liquid to a bowl to cool for a few minutes.
Divide between 9 compartments of an ice cube tray.
Freeze for 30 minutes.
Place a saucepan in a shallow basin of boiling water, placed over a medium heat. Add the dark chocolate to the saucepan, stirring well to melt.
Add 1 tsp coconut oil and stir until melted.
Remove the ice cube tray from the freezer and pour the chocolate over each mint base. Freeze for 30 minutes or until ready to serve.
